There is always something about the weekends that prevent me from cooking … lol…

Yet, I don’t know how; I manage to give them something they all like and keep the entire family and in the mood for a great day.

Now that I think about it. This recipe will come just perfect now that this New Kim Possible movie will be released on DVD on March 26th.

Easy Loaded Nacho / Fast And Easy Weekend Recipe

I’ll be sharing the easiest Loaded Nachos recipe …I Usually go for every weekend.. lol

Ingredients

• 1 pound lean ground beef
• Taco seasoning mix
• 1/4 cup water
• 1 1/4 cups Daisy Sour Cream
• 3 large corn tortilla or Tortilla chips
• 2 cups shredded Mexican cheese blend
• 2 Roma tomatoes, seeded and diced
• 4 green onions, sliced
• 2 tablespoons chopped Cilantro
• 1 Lime

I start by cutting the large tortilla into small triangles. The easiest part and even the kids can help with this. You then fried them. It will only take you 2 or 3 mins per batch. The tortillas can burn really fast, so is best if you do this before starting to do something else to avoid extra crispy chips.

Then I’ll go for the meat… In a nonstick skillet, cook the ground beef over medium-high heat for 10 mins or until no longer pink, you can stir occasionally to break up the beef. Mix in the taco seasoning, a little bit of water and 1/4 cup of the sour cream. Cook the mixture for 5 to 6 minutes more or until fully cooked.

Meanwhile, I put together the fastest Pico de Gallo on another container. So we mix the diced tomatoes, the sliced green onions, and the chopped cilantro. Add a little salt and pepper and squeeze half of the lime. Heat-up 1/4 water and when boiled add it to the Pico. The hot water will help release all the cilantro and onion flavor.

I don’t add Jalapeño to my pico because the kids don’t like it but you can go ahead and add it.

Basically, preparation is done!.

Place a layer of chips on each of 2 large microwavable plates. Top each plate of chips with the meat mixture and the Mexican Blend cheese. Microwave 1 plate at a time for 2 minutes on High or until the cheese is melted.

Top each with the Pico De Gallo and get ready to add another layer of chips, meat, cheese, and pico de gallo. Top it off with a dollop of the remaining sour cream. Pull apart to serve.

This movie is rated it  TV-G (US)…and it goes for Approx. 86 minutes. It also excluded bonus Features like Blooper Reel (DVD exclusive),  Q&A with Sadie Stanley and Sean Giambrone (DVD exclusive), Cast Auditions (DVD exclusive), Music Video, and Trailer.
